So this may be a crazy idea, but I've been using Jott (www.jott.com) which lets you call a phone number and verbally dictate email, blog posts, to do lists, Amazon searches, twitter, etc.  Right now you have to call a number, but how cool would it be to have the same functionality directly from your Chumby (squeeze to talk;-)?  This would provide an easy way to do text entry without a keyboard, and Jott has an API that allows developers to integrate it into their services.  If the platform can handle it, maybe Chumby should talk to Jott about getting audio over the web instead of over the phone lines?  Maybe put that mic to good use?!
