is there a way to manually set the ip of my chumby so it always has the same internal ip address and I don't have to change the port forwarding information on the router as often?

Yes - when you set up the network connection, you are offered a choice of "automatic" (DHCP) or "manual" IP assignment, in which case you'll need to enter the IP, the netmask, the gateway IP, the name servers, etc.
If you currently have an IP over DHCP, you can get the rest of the settings by looking on the Settings->Chumby Info screen. You can create a new connection with your existing access point -the new settings will replace the old ones.
